Cauliflower Soup

This soup will warm you and give you a warm glow.  It tastes amazing and is so easy to make.

Ingredients:

  • One chunk of fresh ginger
  • 1\2 a large spanish onion
  • 1\2 a tin of coconut milk
  • 1 pint of vegetable stock
  • 1-1.5 vegetable stock cubes
  • 1 sprig of fresh parsley chopped
  • 3 cloves of garlic
  • 1 tsp of salt
  • 1 good pinch of black pepper
  • A pinch of Thyme

Method

Fry the onion, garlic and ginger in the pan gently.  Boil the caluiflower in a seperate pot.  When soft drain the cauliflower and add the contents of the pan.  Add the veg stock and coconut mail.  Simmer for 15 mins and blitz in the blender
